    About this recipe: This recipe works well with any cut of chicken, skin-on or off. I prefer it skin-on, as the skin crisps up perfectly under the grill and helps keep the chicken tender.

    Serves: 6 

    • 115g butter
    • 3 tablespoons finely chopped garlic
    • 3 tablespoons soy sauce
    • 1/4 teaspoon black pepper
    • 1 tablespoon dried parsley
    • 6 skin-on, boneless chicken thighs
    • dried parsley to taste

    1. Preheat the grill. Lightly grease a grill pan.
    2. In a microwave-safe bowl mix together the butter, garlic, soy sauce, pepper and parsley. Cook 2 minutes on High in the microwave or until butter is melted.
    3. Arrange chicken on the grill pan and coat with the butter mixture, reserving some of the mixture for basting.
    4. Grill chicken for 20 minutes, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

    I added 1/2 tsp ground coriander and oxo chicken cube on the mixture,The coriander was added by accident thinking it was black pepper but it worked fantastic - 29 Dec 2011
