Grilled Garlic Chicken

    This recipe works well with any cut of chicken, skin-on or off. I prefer it skin-on, as the skin crisps up perfectly under the grill and helps keep the chicken tender.

    Ingredients
    Serves: 6 

    • 115g butter
    • 3 tablespoons finely chopped garlic
    • 3 tablespoons soy sauce
    • 1/4 teaspoon black pepper
    • 1 tablespoon dried parsley
    • 6 skin-on, boneless chicken thighs
    • dried parsley to taste

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat the grill. Lightly grease a grill pan.
    2. In a microwave-safe bowl mix together the butter, garlic, soy sauce, pepper and parsley. Cook 2 minutes on High in the microwave or until butter is melted.
    3. Arrange chicken on the grill pan and coat with the butter mixture, reserving some of the mixture for basting.
    4. Grill chicken for 20 minutes, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

    I added 1/2 tsp ground coriander and oxo chicken cube on the mixture,The coriander was added by accident thinking it was black pepper but it worked fantastic  -  29 Dec 2011

    This is one of our new fave's. Instead of broiling it, I bake it at 375 for about 45 minutes,stirring every 15 minutes or so. This way, you don't have to deal with smoking! This gives you time to prepare rice or noodles and you've got a fantastic meal ready in less than an hour. Yummy!!  -  20 Oct 2006  (Review from Allrecipes US | Canada)
