4 (175g) fillets halibut
1 tablespoon Italian seasoning
1 large tomato, chopped
1 onion, peeled, chopped
150g kalamata olives, pitted
4 tablespoons capers
4 tablespoons olive oil
1 tablespoon lemon juice
salt and pepper to taste

Preheat an oven to 180 C / Gas 4.
Place halibut fillets on a large sheet of foil and season with Italian seasoning. Combine tomato, onion, olives, capers, olive oil, lemon juice, salt and pepper in a bowl. Spoon tomato mixture over the halibut. Carefully seal all the edges of the foil to create a large packet. Place the packet on a baking tray.
Bake in the preheated oven until the fish flakes easily with a fork, 30 to 40 minutes.
Feel free to substitute in any firm white fish, such as cod.
