    About this recipe: This recipe will show you how to make a tasty aioli (garlic mayonnaise) at home. It's excellent for cooking, dipping and in sandwiches. For additional flavour, you can also add some roughly chopped capers.

    Ingredients
    Makes: 350 ml

    • 6 cloves garlic
    • 1/2 teaspoon sea salt
    • 2 egg yolks
    • 1 tablespoon white wine vinegar
    • 300ml olive oil

    Method

    1. Crush the garlic cloves with the salt into a paste using a pestle and mortar; transfer to a bowl. Stir the egg yolks and vinegar into the mashed garlic. Gradually whisk the olive oil into the mixture in small amounts until the mayonnaise is thick and glossy.
