Scrambled Eggs with Feta Cheese

    This is a nice change to the usual scrambled eggs. The feta cheese brings a lot of flavour and salt, so you won't need much seasoning. Sprinkle some freshly chopped chives just before serving, if you wish.

    Serves: 2 

    • 15g butter
    • 3 eggs
    • 1 teaspoon water
    • 75g feta cheese, crumbled
    • salt and pepper to taste

    1. Heat butter in a frying pan over medium-high heat. Beat eggs and water together, then pour into pan. Add feta cheese and cook, stirring occasionally to a soft scramble. Season with salt and pepper, if needed.

    Instead of butter heat some olive oil, add 1 chopped tomato cooking until soft. In a bowl combine the eggs, feta and a pinch of oregano and pour into the pan with the tomato mixture.
