This chicken stew is really quick to make. It's full of vegetables and will be welcomed, any day of the week. Serve with rice or potatoes, for a really hearty meal.

Just made this this evening and was pleasantly surprised with the outcome. I changed the recipe a bit - I used 1 onion, 1lb chicken breast, no celery, peas, sweet corn or courgette but added a good amount of potato cubes. Also added salt to taste, but I think next time I'll skip that as the stock was quite salty anyway. This has made it to my go-to comfort food recipe list :-) - 05 Feb 2013
Easy to prepare and lots of flavor. I cooked the onion, celery, and carrot in a bit of olive oil before adding the other ingredients. This was a comfort food for sure, it reminded me of my Grandma's vegetable soup, something I haven't had since before 2001 when she passed.
