    About this recipe: This chicken stew is really quick to make. It's full of vegetables and will be welcomed, any day of the week. Serve with rice or potatoes, for a really hearty meal.

    Serves: 10 

    • 2 onions, chopped
    • 280g cooked boneless chicken breast meat
    • 125g celery, chopped
    • 1 (400g) tin whole peeled plum tomatoes
    • 250g carrots, sliced
    • 1.2 litres chicken stock
    • 165g sweetcorn
    • 170g peas
    • 115g courgette, sliced

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. In a large soup pot combine the onion, chicken, celery, tomatoes and liquid, carrots, stock, sweetcorn, peas and courgette. Stir together and simmer over medium low heat for 1/2 hour or until vegetables are cooked and tender.

    Just made this this evening and was pleasantly surprised with the outcome. I changed the recipe a bit - I used 1 onion, 1lb chicken breast, no celery, peas, sweet corn or courgette but added a good amount of potato cubes. Also added salt to taste, but I think next time I'll skip that as the stock was quite salty anyway. This has made it to my go-to comfort food recipe list :-) - 05 Feb 2013
