Creamy Mango and Blueberry Fruit Tart

About this recipe: This tart recipe consists of a homemade pastry, filled with a mango-cream cheese mix and topped with fresh blueberries. If you're a little daunted about making your own pastry, feel free to buy a pre-made pastry case. Allow the tart to come to room temperature, before serving.


Serves: 8 

  • 200g plain flour
  • 65g icing sugar
  • 1/2 tablespoon butter
  • 2 egg yolks
  • 2 tablespoons water
  • 225g cream cheese, softened
  • 100g caster sugar
  • 2 ripe mangos, peeled, seeded and chopped
  • 2 tablespoons lemon juice
  • 290g blueberries
  • 5 tablespoons icing sugar for dusting

  1. Preheat oven to 180 C / Gas 4.
  2. Sieve flour and 65g icing sugar into a large bowl. Cut in butter until mixture resembles coarse crumbs. Mix in egg yolks with enough water to form a ball. Knead gently on a lightly floured surface until smooth. Roll out to line an 20cm flan/tart tin. Bake in preheated oven for about 20 minutes or until pastry is golden. Allow to cool.
  3. In a large bowl, combine cream cheese, 100g sugar, mangoes and lemon juice. Beat until mixture is fairly smooth, but still has chunks of mangoes. Spread into baked pastry case and top with blueberries. Dust lightly with icing sugar before serving.

You can also use this recipe to make individual tartlets.
