    About this recipe: Pronounced "Basil Roo-ee", this delicious dish is the perfect summer starter. Basil and tomatoes are seasoned with green chilli, garlic and sea salt. Serve with toasted baguette slices or pitta wedges.

    Ingredients
    Serves: 8 

    • 1 large bunch fresh basil, finely chopped
    • 2 small tomatoes, finely chopped
    • 150g (5 oz) dried breadcrumbs
    • 3 cloves garlic, minced
    • 1 green chilli, seeded and finely chopped
    • 1 teaspoon sea salt
    • 6 to 8 tablespoons olive oil

    1. In a medium bowl, stir together the basil, tomatoes, breadcrumbs, garlic, chilli, sea salt and olive oil. Cover, and refrigerate overnight. Serve with crusty bread, pitta or crisps!
