About this recipe: This sorbet is highly refreshing and jam packed with vitamin C. Serve as a dessert or a palate cleanser in between courses. You can also try and freeze the sorbet in ice lolly moulds, for individual treats.


Serves: 8 

  • 350ml water
  • 300g caster sugar
  • 1 (5cm) piece fresh ginger, peeled and thinly sliced
  • 1 pinch sea salt
  • 1 teaspoon lime zest
  • 475ml orange juice
  • 250ml mango juice
  • 75ml lemon juice

  1. Combine the water, sugar, ginger, salt and lime zest in a saucepan; bring to the boil. Reduce heat to low and simmer 5 minutes. Allow mixture to cool, then pass through a sieve. Stir in the orange juice, mango juice, and lemon juice. Cover and chill 3 hours.
  2. Fill an ice cream maker with the mixture and freeze according to the manufacturer's instructions.
