Apple and cinnamon squares

    3 hours 10 min

These apple squares are truly delicious. This recipe takes the classic combination of apples and cinnamon to create a deliciously moreish cake. Serve on its own or with tea or coffee.

    1. Preheat an oven to 190 C / Gas 5. Grease an 20cm square tin.
    2. Combine matzo meal, cinnamon sugar and salt in a large bowl. Beat in egg yolks, groundnut oil, lemon juice and lemon zest. Fold in the egg whites. Pour half of the batter into the prepared tin. Cover the batter with apple slices, then pour the remaining batter on top.
    3. Bake in the preheated oven until a cocktail stick inserted into the centre comes out clean, about 45 minutes. Cool in the tin for 10 minutes before removing to cool completely on a wire rack.
