130g matzo meal
200g cinnamon sugar
1/2 teaspoon salt
3 eggs, separated, whites beaten until stiff
125ml groundnut oil
1 lemon, zested and juiced
2 apples, peeled, cored and sliced

Preheat an oven to 190 C / Gas 5. Grease an 20cm square tin.
Combine matzo meal, cinnamon sugar and salt in a large bowl. Beat in egg yolks, groundnut oil, lemon juice and lemon zest. Fold in the egg whites. Pour half of the batter into the prepared tin. Cover the batter with apple slices, then pour the remaining batter on top.
Bake in the preheated oven until a cocktail stick inserted into the centre comes out clean, about 45 minutes. Cool in the tin for 10 minutes before removing to cool completely on a wire rack.
