About this recipe: This filling sandwich contains grilled chicken, crispy bacon, lettuce, tomato, herbed mayonnaise, guacamole inside toasted focaccia. Perfect for lunch or dinner.

Serves: 1 

  • 2 slices focaccia bread
  • 1 tablespoon mayonnaise
  • 1 small pinch of mixed herbs
  • 2 tablespoons finely chopped lettuce
  • 2 slices ripe tomato
  • 125g grilled chicken breast
  • 3 rashers streaky bacon
  • 2 tablespoons guacamole

Prep:5min  ›  Cook:5min  ›  Ready in:10min 

  1. Place bacon in a large, deep frying pan. Cook over medium high heat until evenly brown. Drain, crumble and set aside. In a bowl mix together the mayonnaise and mixed herbs, set aside.
  2. Toast focaccia. Spread herbed mayonnaise on one side of one slice, then top with lettuce, tomato, chicken, bacon and guacamole. Top with second slice of focaccia.
