About this recipe: This is a deliciously tart and sweet cookie. The raisins and lemon combine for an interesting and delightful taste combination that goes particularly well with tea.

Serves: 48 

  • 250g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 225g butter or margarine
  • 2 eggs
  • 300g caster sugar
  • 60ml lemon juice
  • 2 teaspoons lemon extract
  • 80g porridge oats
  • 150g raisins

  1. Preheat oven to 180 C / Gas 4. Lightly grease 2 baking trays.
  2. In large bowl, cream butter, sugar, eggs, lemon juice and lemon extract. Mix until well blended. Blend in the flour, bicarbonate of soda and salt. Stir in the oats and raisins. Drop dough by spoonfuls 5cmes apart on to trays.
  3. Bake for 12 to 15 minutes and transfer to racks to cool.

I added more lemon juice but this recipe was still very bland for my taste, I wouldn't recommend - 19 Feb 2011
