    About this recipe: This is a simple roast duck recipe that's easy for anyone to make. It results in a flavourful, perfectly moist roast duck. Wonderful for special occasions.

    Ingredients
    Serves: 4 

    • 2 teaspoons salt
    • 2 teaspoons paprika
    • 1 teaspoon black pepper
    • 1 (2.25kg) whole duck
    • 110g melted butter

    Method
    Prep:10min  ›  Cook:2hr  ›  Ready in:2hr10min 

    1. Preheat oven to 190 C / Gas 5.
    2. Rub salt, pepper and paprika into the skin of the duck. Place in a roasting tin.
    3. Roast duck in preheated oven for 1 hour. Spoon 1/2 of the melted butter over the duck, and continue roasting for 45 more minutes. Spoon remaining melted butter over duck, and roast for 15 more minutes, or until golden brown.

    A decent, basic duck recipe that doesn't overpower the flavor of the duck with too many spices. The butter, however, is *extreme* overkill. Duck is already a very fatty meat. The last thing it needs is to have a half cup of butter dumped over it. Stuff the cavity with some onion, lemon wedges, and garlic cloves, skip the butter entirely, and it's perfect.  -  05 Nov 2008  (Review from Allrecipes US | Canada)
