Spinach and Feta Stuffed Chicken Breasts

    Chicken breasts are stuffed with a mixture of garlic, feta cheese and spinach, before being wrapped in streaky bacon and baked to perfection. Serve with salad, rice, pasta or potatoes.

    Serves: 4 

    • 4 skinless, boneless chicken breasts
    • 125ml mayonnaise
    • 75g feta cheese, crumbled
    • 2 cloves garlic, chopped
    • 285g frozen chopped spinach, thawed and drained
    • 4 rashers streaky bacon

    1. In a medium bowl, mix mayonnaise, spinach, feta cheese and garlic until well blended. Set aside.
    2. Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon and secure with a cocktail stick. Place in shallow baking dish. Cover.
    3. Bake at 190 C / Gas 5 for 1 hour or until chicken is no longer pink.

    My family absolutely love this recipe. My husband is not a chicken breast fan and he loves this recipe. The combination of flavors is just sublime. Definitely now a family staple. the stuffing for us wasn't dry and the bacon meant no extra salt required as I i was a little apprehensive. i highly recommend it  -  15 Mar 2014


    Ive done this recipe several times now and its always delicious. I sometimes sway the mayo for light soft cheese but either is excellent. The only think I add is some gravy on the table for those who want it as it can be slightly dry but still very tasty :-)  -  07 Feb 2014


    Like others found, this is a bit dry. I will try it again following the suggestions from the reviews to make it more moist. I took it out of the oven after 45 minutes and because it looked so pallid, I stuck it under the grill for a few minutes in an effort to brown it up. Not recommended, as it only made it more dry! The filling is very tasty and I could envisage using it in other dishes.  -  25 Sep 2017
