Heat a casserole pot on the hob over medium high heat. Add oil, and sear meat in the centre of the pan for 4 minutes. Turn meat over with tongs; sear all sides for 3 to 4 minutes on each side. Remove meat from pan.

Arrange onion, garlic, and 1 bay leaf in the bottom of the pan, and sprinkle with salt and pepper. Return meat to pan, place remaining bay leaf on top of meat, and cover.

Cook in the oven for 30 minutes. Reduce heat to 150 C / Gas mark 2, and cook for 1 1/2 hours. Remove roast to a platter to rest for 10 to 15 minutes. Slice, and top with onions and gravy.
This beef was amazing, I'm always nervous doing such big joints but your cooking times ensured our beef was absolutely spot on. We like strong flavours so seasoned the beef with a bit of chilli and fresh thyme and garlic as well. We also increased the onions. Gorgeous result, lots of yummy gravy. Thank You!
Fantastic recipe - but I used the divine Ina Paarman Garlic Pepper seasoning and a dash of their Seasoned Sea Salt and the flavour was sublime! Hard to find but I found this website was the best supplier: www.findyourflavour.co.uk
The meat was tender carved well and was not at all tough which was great but the flavour was very bland none of the family liked it in fact only the cats ate it all so it never went to waste
Well as a vegetarian, I can't tell you how this tasted, but my other half declared it to be very tasty, moist and delicious. It is the first joint of beef I've ever cooked, so I was very pleased with the outcome!It was a tesco value piece of beef, so fairly inexpensive, as beef goes anyway! He loved the onion gravy that I made from the other ingredients

I added some peeled and halved potatoes to the pot when it went to the oven. They turned out great! also cooked it covered for most of the time so the onions never got dry!
great recipe. The beef lacks a bit of more flavour so next time I'll add more onions, Iill also sprinkle the meat with salt and pepper and add some more veggies to the pot.
