Beer and lime BBQ chicken

    This BBQ chicken is marinated in a combination of beer, lime juice and spices before barbecuing.

    Serves: 4 

    • 1 lime, juiced
    • 1 (330ml) bottle beer, such as Corona
    • 1 teaspoon honey
    • 3 tablespoons chopped fresh coriander
    • salt and pepper to taste
    • 4 skinless, boneless chicken breast fillets

    1. Preheat barbecue for medium heat. When ready, brush the cooking grate lightly with oil.
    2. In a shallow bowl, mix together the lime juice, beer, honey, coriander, salt and pepper. Place chicken into the sauce, cover, and marinate for about 30 minutes.
    3. Remove chicken breasts from marinade, and place on the grate. Cook for about 8 minutes on each side, or until juices run clear. Discard leftover marinade.

    This had no discernible smell or taste other than the fresh cilantro I used. I marinated it for 1 hour and then added ginger and garlic in the hopes of giving it some added 'zing', but it just didn't work. And I don't consider salt and pepper 'spices'.
