Double chocolate cookies

    These chocolate cookies are packed full of chocolately goodness. With cocoa and a big helping of chocolate chips, they will satiate any chocolate lover's chocolate craving. Serve on their own or with tea or coffee.

    Makes: 18 cookies

    • 275g butter or cooking margarine, softened
    • 400g caster sugar
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 250g plain flour
    • 65g unsweetened cocoa powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 335g dark chocolate chips

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl, cream together the butter and sugar. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, bicarbonate of soda and salt, gradually stir into the creamed mixture. Fold in chocolate chips. Drop by rounded spoonfuls onto ungreased baking trays.
    3. Bake for 8 to 10 minutes in the preheated oven. Do not overbake. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    This recipe sounded good so tried it but unfortunately the mixture contains so much fat that the cookies remain overly soft even after adding another five minutes to the cooking time. They don't harden enough to be able to hold one on the edge and it not try to break away. They taste good but a little too sweet. They certainly look the part but I would recommend a good teaspoon size amount on a baking tray and longer cooking time.  -  16 Apr 2014


    I didn't have the heart to put that much sugar in so chickened out at 280g. Didn't put the full amount of choc chips either. I agree they are a bit cakey but half way through and at the end I banged my baking trays to flatten them down and make them chewy.......makes loads  -  19 Dec 2011


    Made a batch of these today (made 14 cookies). Taste great but came out more like cake-cookies rather than the proper crumbley kind.  -  13 May 2011
