Chicken in marsala sauce

    This is an easy recipe for a delicious chicken in marsala sauce dish perfect as an evening meal for two. Serve with rice.

    Serves: 2 

    • 2 chicken breasts
    • plain flour, for dusting
    • 100ml olive oil
    • 4 tablespoons marsala wine
    • 150ml double cream
    • 1 tablespoon chopped fresh dill

    1. Beat chicken between cling film until about 1cm thick, then lightly dust with the flour.
    2. Heat 2 tablespoons of the Olive Oil in a large frying pan, ad the chicken breasts and fry the chicken for about 1 minute on each side.
    3. Add the wine and FLAME for about 15 seconds.
    4. Add the cream and dill and cook uncovered over a LOW heat for about 4 minutes to allow the sauce to thicken.
    5. Serve with chunky chips/potato scallops.


    It is best to use double cream as single cream tends to curdle.


    It would be best to FLAME the wine to evaporate the alcohol as Marsala wine is very sweet.
