    About this recipe: Easy tomato and pepper soup.

    Serves: 4 

    • 2 onions, chopped
    • 2 yellow peppers, chopped
    • 30g mushrooms, chopped
    • 2 cloves garlic, crushed (or a sprinkle of dried)
    • 2x400g tins of chopped tomatoes
    • 3 teaspoons of dried mixed herbs
    • salt and pepper to taste
    • 2 sprays low fat cooking spray or a little oil

    1. Spray the pan with the cooking spray or oil add the onion peppers and mushrooms and garlic to soften. Add the remaining ingredients, bring to the boil and simmer for 15 mins. When done blitz in the blender, return to the cooker and stir.

    Other ideas

    If you like a thicker soup add a table spoon of cornflour or why not try cooking up and pour over pasta (do not put in the blender for pasta).
