Soy and Ginger Tuna

    A very healthy 10 minute meal with mostly store cupboard items.

    Serves: 2 

    • 2 teaspoons minced garlic
    • 1 teaspoon oil
    • 2 tablespoons soy sauce
    • 1/2 teaspoon ground ginger
    • 350g par-boiled brown rice
    • 1 can tuna
    • 10 mushrooms

    1. Fry garlic in oil for a few minutes. Slice and add mushrooms, soy sauce and ground ginger.
    2. Stir in rice and cover the pan, continue to stir to avoid burning rice untill rice is cooked.
    3. Stir in a can of tuna and let it sit for 2-3 minutes before serving.


    Quite a healthy dish using brown rice and canned tuna, two of my favourite health-food treats.
