Nanna's Bacon Hot Pot
Makes: 4 for a small dinner
- 2kg red potatoes
- 1 pack (8 rashers) smoked trimmed bacon
- 1 large onion
- salt and white pepper

- Peel and chop potatos into 1/2cm thick (try to keep all the potatoes roughly the same thickness for an even cooking), dice onion into fairly small pieces and cut bacon into 1cm thick bites.
- In an ovenproof dish, layer the onion then potato, seasoning and bacon till all are used.
- Place a lid on top and oven cook slowly for 2-3 hours till potatoes are soft.
When making a Hotpot I usually steam the potatoes first for about 15 mins. This should cut the cooking time down considerably, and can be done while preparing the rest of the ingredients. - 09 Feb 2013
