Nanna's Bacon Hot Pot

About this recipe: Slices of potato, onion and bacon for a great side dish treat or different main.

Makes: 4 for a small dinner

  • 2kg red potatoes
  • 1 pack (8 rashers) smoked trimmed bacon
  • 1 large onion
  • salt and white pepper

  1. Peel and chop potatos into 1/2cm thick (try to keep all the potatoes roughly the same thickness for an even cooking), dice onion into fairly small pieces and cut bacon into 1cm thick bites.
  2. In an ovenproof dish, layer the onion then potato, seasoning and bacon till all are used.
  3. Place a lid on top and oven cook slowly for 2-3 hours till potatoes are soft.

I've been eating this since I was a child but I boil mine, lots more juices when it's boiled! either way its so yummy. also you didn't add water? if you fill whatever you're using with water the juice you get from it is amazing!!!! - 16 May 2014

When making a Hotpot I usually steam the potatoes first for about 15 mins. This should cut the cooking time down considerably, and can be done while preparing the rest of the ingredients. - 09 Feb 2013
