Susie Lacon's best roasties with goose fat

    These are simply the best roasties ever!! When I cook a Sunday lunch for my large family they always ask how I make these and ask for double helpings!!

    Serves: 8 

    • 1.5kg red potatoes, peeled and halved
    • 1 tablespoon semolina
    • goose fat/dripping

    Prep:1hr  ›  Cook:50min  ›  Ready in:1hr50min 

    1. Preheat oven at 220 C / gas mark 7.
    2. Add potatoes to pan of boiling water and parboil for approx 5 mins. Drain.
    3. Wait until slightly cooled then sprinkle the semolina over the potatoes. Put lid on the pan and shake until the edges of the potatoes are puffed up (this makes them really crispy).
    4. Heat the fat until smoking. Gently put the potatoes into the fat (they should sizzle) and cook in the oven for 50 mins turning occasionally. These willl be the best roasties you've ever had!!
