Traditional Australian recipe, handed down from my mother. Her recipe has coconut and ginger in it which makes these especially good. Originally, these delicious bikkies were lovingly baked and sent in care packages to our soldiers at war.

Very traditional Australian dish that my family would make when we were out camping in the middle of the bush (would use camp fire to cook and put the damper on a stick - the hole the stick would leave was filled with the butter and golden syrup)

These are non-alchoholic but very delicious. It makes enough for 12 shot glasses, but add more or less if you like, Great as starter, desert, snack anything really. I serev them up at barbecues and garden parties.

I had this great tasting drink in a little cafe in Australia. The mango sorbet makes all of the difference! Serve in chilled, sugared rim glasses.

Australia's famous Lamingtons are squares of sponge cake that are first dipped in chocolate glaze and then in coconut. This biscuit version's inside is denser and loaded with toasted almonds.

Lamingtons are little sponge cakes coated in chocolate and coconut. A traditional Australian treat that appeals to most. Any firm type of plain sponge cake works well.

This recipe is delicious and I have great fond childhood memories of it. I recently went out for a dinner in a local franchise pub and saw meatloaf with mustard mush on the menu, I instantly thought of my mums meatloaf and promptly ordered it. I was disapponted as when it came out as i got 2 thinly sliced catmeat portions on a sloppy watery potato mash. I then emailed mum when I got home for the meatloaf recipe and look forward to the home made results and more fond memories of home.

I originally made this whilst living in New Zealand some years ago and adapted it to suit my taste. I have made this many times now in the UK and goes down a treat. I usually order the corned silverside from my local butcher 6 or 7 days in advance as i can never find it in the supermarkets. You could omit the beer but it just does not taste the same without.

Being an Australian I love nothing more than a great pavlova. This is a very easy - tasty pavlova! Great to whip up for guests on short notice! :)
