Haddock, tomatoes and red and yellow peppers baked in individual aluminium foil parcels. Serve with rice for a healthy dinner. I use haddock, but feel free to use whichever type of fish you like.

A sweet take on salmon fillet with balsamic vinegar, onion, garlic, honey, white wine and Dijon mustard. Leaves a sweet gorgeous taste like you wouldn't believe.
Sugar Free Parsnip and Pecan Cupcakes

I've been making my own wholemeal bread for some years, but in 2012 I discovered the sourdough version and am now hooked! It has such a tangy flavour and sticky moist texture with a crisp outer crust.

Vegetable bean soup
This is a hearty, warm and healthy soup. Easy to make for beginners. I came up with this recipe when I was looking for a soup to make for my partner and I to take to work for lunch. I needed something that would last at least 6 portions and that would be suitable for freezing. I wanted to ensure I was keeping the budget low and the goodness high so opted for swede instead of potato and beans instead of meat. I believe this soup would be to everyone's liking, even the kids.
