My Favourite Tiramisu
You'll need 4 large bowls, an electric mixer and a triffle bowl (or a 5in deep 8 x 12in glass dish). If you do not have an electric mixer, the prep time is slightly longer as you will have to beat everything by hand. TIP: If you can't find ladyfingers, you can use plain Rich Shorties Biscuits or any plain biscuit TIP: You can add the inside of one vanilla pod or 1 tps vanilla extract to the custard mixture and freeze to make a creamy ice cream.
Pizzoccheri
Pizzoccheri is a typical dish from Valtellina, the alpine region where my grandparents are from. It is made with a special type of pasta made with buckwheat, the "pizzoccheri", shaped as a short tagliatelle, about 7-8cm long and a bit thicker, cooked together with potatoes and cabbage or chard leaves. It is simple to make and goes down like a storm!!

Fat free pasta sauce
Having been in catering for 40 years the biggest problems we all face is a filling tasty meal that is also healthy, this recipe can be used on its own over pasta with maybe a breaded escalope or as the base for Bolognese lasagna even spanish chicken. Due to the lack of any fat at all this does need a long slow cook. I tend to make a massive big pot of this and then freeze it into usuable size portions (rest of the now grown up family always grab a few from the freezer whenever they come round)
