This is a classic banoffee pie, sure to satisfy any sweet tooth! Since the most time consuming thing is making the toffee, I like to boil a few tins of milk at a time and reserve some for the next time I make banoffee -- doing this makes the second, third and fourth pies actually quite simple to make!

Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. It might be easier if you use a sugar thermometer the first few times to check if the toffee is ready. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

Green Tea Layer Cake

This is a light and moist cake that is not too sweet and has a refreshing green tea fragrance. The icing uses cream cheese but has enough sweetness to mask the sour taste. The matcha (green tea) powder gives it a delicate green hue too. This cake can also be baked as a in a 23x33cm (9x13 in) tin or as 2 separate round cakes in two 20cm (8 in) round tins. Adjust baking time accordingly.

I make these so they have a good kick to them, but it's not necessary. It's the icing that gives them the real ginger strength/flavour, the stem ginger is really just for texture. Lemon icing is a good substitute.
