Chicken stock has almost endless uses, from soup bases and gravies to a rich but low fat flavouring for veggies. The stock freezes will in ice cube trays or bags. After trying homemade stock you will never want the shop-bought kind again.

A basic crêpe recipe which you can fill with whatever you like. I cook them nearly every Sunday morning.

Being that I'm from America I just had to add these fluffy pancakes. Also, since I can't find a maple syrup that I like, I took an old Apple Pop-Tart filling recipe and came up with this. Great for breakfast or even dessert!

This is just like traditional Christmas pudding, but with less fat. The house smells great all day long. It's wonderful served with rum or cranberry sauce.

Brilliant chef Antony Worrall Thompson has donated to TREE AID a diabetic friendly tree cake. Antony: "Villagers in Africa know all about foraging for food for free in their woodlands. Using the most nutritious of these foods could go a long way to reversing malnutrition. I want people to have fun cooking my tree cake and finding out about TREE AID’s work to help villagers grow important food trees."

With its two key ingredients - rum and butter - this Christmas cake recipe ought to be a hit. This is less dense and more cake-like than many Christmas cake recipes. It has become a favourite of my friends and family at Christmas, and is delicious by itself, or covered with a layer of marzipan and icing.

The spiciness of the garlic, chillies, lemon grass, and coriander is balanced by rich coconut milk and roast duck. This is a quick way to get dinner on the table, if you have a roast duck to hand. It only takes 15 minutes to prepare and another 15 to cook.

Slightly sweet parsnips are superb with crisp-skinned duck fillets in a rich, fruity glaze that's simplicity itself to make. Serve with steamed green beans and warm French bread. Delicious!
