Based on a classic French dish called navarin, this is a delectable stew. In France it is made in spring, as a celebration of the new season's lamb and the delicate young vegetables. Serve with a dish of freshly cooked spring greens, and hand round a basket of crusty French bread.

Simple, healthy and tasty - squash is dressed with olive oil, fresh parsley and garlic. If you don't want to peel it first, simply slice in half lengthwise and scoop out the seeds. You can serve this hot from the oven or at room temperature. Substitute pumpkin or sweet potato if butternut squash isn't available.

This is a chunky cranberry sauce with apple, sultanas and spices. I suppose it's more like a chutney, but either way it's great with leftover turkey on Boxing Day.

This unique puréed soup is made with red lentils, dried apricots and tomatoes cooked in chicken stock with cumin and thyme. The addition of fresh lemon juice prior to serving intensifies the gorgeous flavours.
