A traditional style very rich Italian ragu. My flatmate loves it and she's from Milan, so I'm fairly sure it's good! To be entirely traditional you should leave out the green pepper and use either garlic or onion, and not both. You could also use a mixture of beef and pork mince.

This hearty and delicious dish is best made with fresh pasta. You can substitute 500g of cannelloni cooked according to packet directions, then proceed as directed.

A hearty stuffed pasta that has a beef and vegetable filling, baked with a fresh homemade tomato sauce. Serve with a green salad and crusty Italian bread, if desired.

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

Making this lasagne a day ahead and refrigerating overnight allows the spices to meld, and gives it exceptional flavour.

Hearty, healthy and everyone's favourite Italian dish – don't you want pasta and meatballs for supper tonight? Unlike traditional recipes, these meatballs are low in fat, yet they're full of the terrific taste you crave.

This is a very special old Italian dish that warms your stomach, as well as your heart. It is a labour of love, but worth every bite! For a different taste, you can use a combination of beef and pork mince.

Comfort food at its best – this richly flavoured Italian-style beef is perfect for a family meal or relaxed entertaining.

A simple sauce that works just as well with TVP instead of mince. Add to spaghetti or as your meaty base in lasagne.

Passed down from my mum from a friend of my dad's, the late Mark Lasey. They went round for a dinner after the pub one night and all he had was mushrooms, onions, minced beef, baked beans and pasta that could have gone together as a dish. The dish was a success and we have now perfected it as a favourite family dish and have named it Laseyona after my dad's dear friend.

This is a weekly favourite. Especially when we all have afternoon and evening activities so eating happens at odd times. Easy to prepare and easy to heat up later. If you keep the macaroni and sauce separate the sauce can also be used on a bap. Nice with a fresh salad.

I like a deep, layered lasagne.

Easy to prep and cook, with fantastic results. One of my favorites, and my family's too! I use OXO cubes for the stock cubes as they give the best flavour.

A tasty and filling dish that can be served with pasta or rice. This dish can also be adapted to the slow cooker 6 to 8 hours on low.

I wanted to make Lasagne for the family, but none of the recipes I could find worked with the ingredients I wanted to use, so I improvised and came up with this!

After many attempts to create the best meatballs, I think I've got them as good as I can get them. Great on a budget and just as a warning, you will not be able to stop eating them. I serve with wholewheat or egg spaghetti, as the normal and quick cook ones don't taste of much to me and, of course, garlic bread.

Lean, juicy steaks are quick to cook and taste delicious with a tomato sauce, jazzed up with a little wine, garlic, olives and capers. Serve with tagliatelle and a salad of leaves and thinly sliced green pepper. Delicious!

This recipe is just the best. The method is more important than the ingredients, vary them if you want, but do not use cheap wine! This sauce can be used with spaghetti, lasagne, cannelloni, or try stuffing some squid with it and baking!

This is my version. Veal, beef, pork and pancetta are simmered slowly in this authentic, rich pasta sauce. Great with pappardelle.
