Chinese Clay Pot Chicken and Rice Without the Clay Pot

I have modified this Chinese recipe that my mother handed down to me. The traditional way of cooking this dish is by using a clay pot. However, a frying pan, together with a saucepan will do just as well. It's simple and delicious to eat.
Sharon's chicken fried rice
A quick and easy dish! Can also be made with pasta - both are really tasty. This is a great way to use up leftover rice if you don't have the quick pre-steamed wok rice to hand, and you can adjust the seasonings to taste - add additional veg, if desired.
Chicken and ham fried rice
An easy one bowl dish, cheap and quick to make and full of flavour. Great lunch or TV snack. Serve with mini spring rolls, prawn toast and mini ribs for a more substantial meal if required. My husband loves this and thinks it tastes very authentic.
