For me, paella is possibly the best dish in the world. I think that this, my take, is close to that. Absolutely fabulous with a heavenly array of differing but complementary flavours, it is well worth the effort to make at any time. Will grace any table or occasion.
This family paella recipe is simple, authentic, delicious and satisfying if you use good quality ingredients. I have catered for hundreds at a time with it and had no complaints, and I'm always being asked for my recipe so here it is! Although the pictures here show my Dad and I preparing enough paella for well over 100 people, the recipe is designed to serve around six people. Enjoy :)
A Spanish classic. A basic paella with chorizo slices, chicken, green peas and saffron rice is easy to make.
This is the classic Spanish dish made with an authentic recipe. Rice is simmered chicken, prawns, mussels, lobster, clams, peas and mushrooms in a saffron-seasoned stock.
Known as arroz con pollo. This dish is a meal in one. It takes a variety of chicken pieces, which are cooked together with rice and peppers. If you like your arroz con pollo hot, add more chillies.
Spanish inspired all in one pot dish with rice, chicken, celery, chorizo and peppers. Summer on a plate. Serve with crusty bread, a good bottle of wine and eat alfresco under the sun (optional). You can use brown, long grain or basmati rice for this dish.
A little spicy chorizo goes a long way and adds a fabulous flavour to this colourful rice and vegetable dish. Camargue red rice is especially nutritious, with a higher fibre content even than brown rice, and a wonderful nutty texture.
Sausage and chicken are cooked alongside rice, resulting in a deliciously flavoured savoury rice dish. It's a perfect meal. Serve with a crisp green salad and crusty bread.
