This is a wonderfully creamy chicken, wild rice and mushroom bake. Serve with a side of green veg. That's all you need. If the mixture is made ahead and refrigerated before baking, let stand at room temperature for 30 minutes, then bake.

This is a very quick and easy meal that was passed down to me from my mum, who claims she invented it (I'm not sure that I believe her though). Done in a matter of minutes, great for last minute dinner parties! Guests will enjoy the variety of taste in this meal.

I took a look around the site for a recipe like this, and not having found one, I decided to have a go creating one. My family really enjoy it. You can adjust the heat to your own preference. You could also omit the chicken for a nutritious vegetarian option. I think it's pretty versatile. It would be delicious served with tortilla chips, guacamole and a fresh green salad. Hope you like it!
