I make this cake as stress-relief for my exams (what with you geting to mash it together with your hands!) and I can guarantee that every time you make it it'll come out moist and (close-enough) perfect! I usually sandwich it with jam and chocolate butercream, but for a summer party you can't beat halved strawberries and whipped cream.
Stunning and very tasty cake for grown ups. It doesn't contain any flour and it's actually quite easy to make. I called it a layer cake but it's actually only 2 layers... We have to bake a cake first and cool it down. Then prepare the cream we put inside in-between the layers and cool it again in the fridge - well, I prefer it that way :) The only picture i have is when I've made it for Easter... enjoy!
I had never baked a cheesecake before this; only ever whacked together some cream cheese and mascarpone and put it on top of a biscuit base - and the conclusion is it really tastes much better if you make it from scratch. This cheesecake tastes divine! I made a raspberry coulis and created a marble effect on the top and the outcome was fab. It didn't really sink that much in the middle which was brilliant as well!
This is a wonderful accompaniment to a nice cup of tea. Serve sliced and buttered.
This is a sponge cupcake with pink icing on top. It is wonderful and yummy, and this makes 18 cupcakes!

They make a brilliant everyday treat with your morning cuppa, but why not smother them in Orange Blossom Icing (check our other recipes) and give them away as a yummy gift?

I made this for Mother's Day because my mum loves tiramisu! I can honestly say it wasn't any more difficult than making any cake - and it was worth the extra time of brushing coffee over the sponge, whipping the mascarpone because the result was amazing, everyone loved it, it went so fast! The mascarpone centre also has a splash of Marsala wine - all the best parts of tiramisu!
