Try our easy homemade houmous recipes instead of buying shop-bought. Houmous makes a fantastic party dip when served with pitta triangles. It's also fabulous in sandwiches and wraps, or as an accompaniment to your favourite Middle Eastern fare.
Hummus is such an easy thing to make at home and it tastes much better than shop bought. Perfectly good hummus can be made using tinned chickpeas but if you have time, and you want something a bit special, cooking dried chickpeas from scratch creates a lovely texture and flavour. You can get tahini (sesame seed paste) in most supermarkets or Turkish shops. I usually put my hummus in a Spanish cazuela, pour on some more olive oil to prevent it from drying and sprinkle on smoked Spanish paprika, or use Greek paprika if you can get it.

This chickpea puree is simply divine. Chickpeas are blended with lemon zest, lemon juice, tahini, olive oil and garlic. Serve as a dip with vegetables or pitta bread. It also does well as a sandwich filler.

Houmous gets a flavour boost thanks to parsley and spring onion. It's also super easy - everything goes into the food processor. Vary the flavour by adding a few chopped mint leaves, a little fresh ginger or dried chillies.
