This is my version of beef bourguignon. I always add lots of garlic and a decent red wine. Serve with mash or crusty bread. I find it always tastes better the next day, so worth making ahead if you're expecting company. Freezes well.
Vegetable ragu with chicken thighs
This came about when I really fancied Italian food but the only meat I had in the fridge was chicken thighs. As I made the ragu with nice chunks of mushroom and onion it tasted so good on its own I realised that with pasta it would also make a very enjoyable veggie dish. Either way it is also cheap and filling.
