I make this jam (actually, I suppose it's more like a jelly) every year in early June with big beautiful elderflowers. It requires soaking for 3 days before you can actually make the jam in less than 15 minutes after that. Besides spreading it on bread, you can use it to glaze fruit tarts or as a sweet filling for cakes mixed with cream.
I've tried a couple of different recipes for elderflower cordial, and I've used this recipe a couple of times now and it produces an excellent result. The light flowery taste of elderflower cordial is one of the most refreshing and individual flavours, which transports you to the long days of early summer.
Late May or early June is the time to make this amazing elderflower syrup or cordial. It tastes great added to sparkling water or Prosecco. I also use it to moisten sponge cakes. The elderflowers should be fully blossomed with as much pollen as possible is on them.
I made this for the Royal Wedding, and being the wedding of the century - any old strawberry jam would not do. Instead, taking some inspiration from my favourite cocktail, the "Red Lady", I decided to do a strawberry and elderflower jam. Enjoy!

This is an easy to make refreshing drink made from elderflowers. These start to make an appearance around June. Once made and bottled it can be frozen and used when required. I first made it with my children who helped to pick the flowers and then make the drink. They still enjoy it and is now an early summer ritual. It's nice as a gin mixer, or diluted with soda or sparkling water for a change. Can be made without the oranges and less lemon according to your preference.

Traditional elderflower cordial uses lemons. I find this a little tart so I replace some of my lemons with oranges instead.
Use this to drizzle over plain sponge cake, in icing for fairycakes or in ice cream. It's also worth adding a drizzle to your Pimm's and lemonade!
A refreshing sparkling summer drink made with fresh elderflowers. There's no alcohol in this recipe but you could add champagne to the cordial instead of sparkling water.
