    This is an old Polish recipe and one of the traditional ways we cook goose. Apples, juniper berries and marjoram are placed in the cavity while it roasts, which keeps the meat moist and adds loads of flavour.

    This German-style goose with a chestnut and apple stuffing is slowly roasted in the oven at 80 C, which keeps the bird nicely moist. If your lowest oven temperature is higher, set your oven to the lowest temperature. The roasting time will be shorter. The goose is done when an instant-read thermometer inserted into the thickest part of a thigh (but not touching bone) registers 77 C.
