Mushroom quiche with shortcrust pastry
This is my recipe for a basic mushroom quiche with home made short crust pastry. It takes about an hour (ish) to bake from scratch including making the pastry.
The pastry will be enough for a large flan dish or two of those disposable foil ones (as per the picture).
Obviously you can substitute the mushrooms and onions for the filling of your choice and skip the pastry making steps if you are using a ready made case.

You can also make this as one large pie, but I prefer to make it with individual ramekins. The cream adds richness and brings out the delcious taste of the mushrooms, thyme and leek. An easy and quick way to get your family to eat vegetables!
Cheesy veg pie
This has been a family favourite for years. Even my meat eating stepdad loves it. You can change the veg in this for anything you want - my mum used to use cauliflower instead of broccoli. The quantities can easily be changed too, this serves two greedy people, or 3-4 people with small appetites.
