This open pie, with its richly flavoured ‘risotto’ crust and Mediterranean vegetable filling topped with melting cubes of soft mozzarella, looks wonderful and tastes sensational! Serve with a chunky green salad of chopped celery and chicory tossed with a little plain low-fat yogurt and chopped fresh mint.
Carrot tarts, both sweet and savoury, were popular during Elizabethan times because they were naturally sweet and colourful. Here the smooth and creamy filling is made with low-fat soft cheese, plus cashew nuts for extra protein. The oats in the pastry provide a lovely nutty flavour.
Yummy comfort food at its best, also a cunning way to get kids to eat lentils. Crispy potato topping covering a tasty blend of red lentils with carrot, onion and celery in wine and stock.
This is a cheese pie that you can use as a basis for your own variations. You could put a thin layer of pickle on the pie base before filling. Another popular variation in our family is the addition of bacon. It's so simple, even I can manage it!
A combination of favourites, this cauliflower cheese pie is made with a delicious potato pastry. Kids will love this.
Flavourful vegetarian pie with a mushroom gravy and Portobello mushroom filling.
An original French recipe my mum used to bake. Great to eat with a salad during summer or even winter. Absolutely delicious!!! Can be prepared the day before and served as a starter or main dish. Can substitute Emmental for Gruyere cheese.
A mouthwatering-good vegetable pie.
This is a wonderful, savoury, quiche-like pie that I use as a vegetarian main dish. It could also be altered for use as a starter if made using mini-tart tins. It always gets rave reviews!
A favourite of mine growing up...total comfort food. It was always on the table when I had had a bad day in school....Mam was a total mind-reader!!
These vegetarian-friendly pies are simply divine. Puff pastry encases a creamy vegetable filling. Enjoy for lunch, dinner or general snacking.
The ultimate in comfort food! A heavenly, light cheesy cross between a pie and a souffle - perfect with freshly baked bread or a green salad. As it only takes half hour to make, it's a wonderful, quick supper.
This leek tart recipe is gorgeous, and results in two tasty and rustic little tarts without much effort. You can easily halve the recipe to make one tart. Use a good quality shop-bought shortcrust pastry, or use your favourite recipe. Enjoy as a light lunch, main course or starter.
A step up from ordinary quiche! You'll only need a sliver of this so it's perfect for Christmas parties. You can switch out red onion for leeks, if you prefer.
This is my recipe for a basic mushroom quiche with home made short crust pastry. It takes about an hour (ish) to bake from scratch including making the pastry.
The pastry will be enough for a large flan dish or two of those disposable foil ones (as per the picture).
Obviously you can substitute the mushrooms and onions for the filling of your choice and skip the pastry making steps if you are using a ready made case.
You can also make this as one large pie, but I prefer to make it with individual ramekins. The cream adds richness and brings out the delcious taste of the mushrooms, thyme and leek. An easy and quick way to get your family to eat vegetables!
This has been a family favourite for years. Even my meat eating stepdad loves it. You can change the veg in this for anything you want - my mum used to use cauliflower instead of broccoli. The quantities can easily be changed too, this serves two greedy people, or 3-4 people with small appetites.
I created this vegetable pie to make vegetables seem yummy to my young son. It is simple, versatile and all my vegetarian friends love it.
Looking for something to make with a few potatoes, a head of cabbage, some onions and came up with this.
Try this potato, olive and goat's cheese pie for a delicious flavour combination, perfect for lunch or supper served with a salad.
