This is a perfect cake for celebrations which need to be made ahead of time. It is a stiff cake with a moist texture so perfect for carving for novelty cakes. Wonderful torted with jam and buttercream or just left and covered with marzipan/icing, this cake is so versatile you can pretty much do anything with it! It will never curdle and is so simple even my 3 year old has made it, never fails and always tastes perfect!
Pecans add a lovely crunch to this delcious carrot cake but feel free to leave them out if you don't like nuts. The cream cheese icing is what takes this classic carrot cake to the next level!
This is the traditional recipe for a Victoria sponge cake, a much loved English favourite. See footnote about weighing the eggs for best results. Serve with buttercream as in the recipe, or freshly whipped cream.
This is the best vanilla sponge mix I have ever made or tasted and is so easy to make. The key to it is how long you whisk it for and the baking time. You can use the recipe to make 1 whole sponge cake. Just lengthen the cooking time to around 25 to 30 minutes (although the trick is to judge by sight and bounce!)
