Fat free pasta sauce
Having been in catering for 40 years the biggest problems we all face is a filling tasty meal that is also healthy, this recipe can be used on its own over pasta with maybe a breaded escalope or as the base for Bolognese lasagna even spanish chicken. Due to the lack of any fat at all this does need a long slow cook. I tend to make a massive big pot of this and then freeze it into usuable size portions (rest of the now grown up family always grab a few from the freezer whenever they come round)
Butternut Squash and Barley Risotto
Well given food prices are rocketing I tried using barley instead of Arborio rice. It was a success, filling, healthy and still really yummy! NOTE: This is very filling and quite rich in flavour. So I sometimes serve half portions with some nice green beans or other summer Veg/green salad. It keeps in the refrigerator great in an air tight container or ziplock bag. It tastes great the next day cold or re-heated and so we take the leftovers for filling lunch at work.

This gorgeous pasta sauce has meaty beef mince and sausage, loads of fresh tomatoes and an absolute cornucopia of beautiful veg: Courgette, mushrooms, carrots, spinach, green and red peppers, onion and garlic. Add fresh herbs and seasoning, and you've got a very yummy, healthy pasta sauce indeed. Note: The longer it simmers, the more flavourful it will be!
Super low fat slow cooker ragu
I'm on a super low fat diet but not willing to sacrifice flavour at all. This is one of those recipes that make you forget you're on a diet at all (and we all need those!). Serve with tagliatelle and plenty of freshly grated Parmesan cheese.
