The full colour spectrum of peppers are roasted with garlic and puréed with fennel-infused vegetable stock to create this colourful low-fat soup. You can of course use 4 different colours of peppers if you have them, green, red, orange and yellow!
I came up with this sandwich when my husband wanted a ham and cheese toastie, but I decided to experiment with some ingredients from the fridge. He absolutely loved it!

Lovely combination of roasted red or yellow peppers with chickpeas, mint, capers, lemon, garlic and olive oil. I prefer to cook the chickpeas myself, but you can of course also make this salad with chickpeas from a tin. This simple but flavourful salad goes well with almost any fish.
Breadcrumbed chicken in a sauce made from roasted red peppers, garlic and a splash of white wine - delicious! Nice served with fries and and salad or veg. A lot of preparation can be done in advance such as making the sauce and preparing the chicken.
