    These gluten free crepes are made with a range of alternative flours including rice flour, potato flour, tapioca flour and xanthan gum to make the texture just as good as traditional crepes. They are also great to make as thicker pancakes and will hold their shape in the pan, such as penguins or a face, etc. I like to double this recipe and use the batter up over a couple of days.

    These mini puffed pancakes are made with self-raising and buckwheat flour to give them a light, spongy texture. They are topped simply with a little butter and a sprinkling of icing sugar. If you do not have a poffertjes pan, use a large frying pan and scoop a small tablespoon of batter per poffertje into the pan. Make sure you leave approximately 2cm of space between each poffertje so that they do not stick together.
